Ultimate Eton Mess

Now the sun is here its time to break out the traditional English summer pudding, Eton Mess! Here’s our ultimate Eton Mess recipe!

What you need

1 cup of strawberries

1 cup of raspberries

4 tablespoons of icing sugar

4 meringue nests

1 tablespoon of vanilla essence

600ml double cream

4 large glasses for serving

This serves four good portions!

Lets get started!

Take half of the berries, puree them into a sauce consistently, and leave them to one side.

Start whipping all the double cream while slowly adding the icing sugar.

When the cream has formed soft peaks, fold in the vanilla essence.

Next Step..

Break up the meringue nests.

I prefer chunky pieces as they are scrummy and chewy in the Eton Mess.

Layers Baby!

Pour some of the berry sauce into the bottom of your serving glasses, then a layer of cream.

Chop the berries and place a layer with meringue and more berry sauce. Repeat these layers until you get to the top of the glass.

Finish with a healthy layer of cream and decorate. I love to add a couple of macarons.

Serve!

Serve this delicious pudding with a glass of raspberry lemonade or Rosé wine!
